Salvadores Mezcal Cirial Joven is an artisanal mezcal from Tlacolula de Matamoros, Oaxaca, Mexico, crafted by the Salvadores family using wild Cirial (Karwinskii) agave plants aged approximately 13 years before harvest. The brand was officially registered in 2020 by Flavio Pérez Méndez and his family, whose roots in mezcal production trace back to the early 1900s.
Production follows traditional artisanal methods: agaves are slow-roasted in an earthen conic pit oven, ground by tahona stone, naturally fermented in open wooden tubs with wild ambient yeasts, then double-distilled in copper alembic stills. The result is a Joven (unaged) mezcal bottled at 48% ABV.
On the nose, Salvadores Cirial offers aromas of orange blossom, jasmine, tobacco, and green karwinskii with mushroom undertones. The palate delivers sweet cooked agave, overripe red apple, mesquite, and vibrant umami-driven green vegetal flavors. The finish is warm and refreshingly cheery, evoking parsley, black pepper, and roasted corn.
Salvadores Cirial has earned a BTI Gold Medal (2020), a San Francisco World Spirits Competition Silver Medal, and a 93-point rating from Tastings.com. It holds a Protected Designation of Origin certification from the Regulatory Council of Mezcal.
