Semifreddi's Rosemary Focaccia is a hand-formed, artisan flatbread from this East Bay, California bakery, sold at Costco as a two-pack of 16-ounce loaves. Each loaf is dimpled by hand before being brushed with rich extra virgin olive oil and topped with fresh rosemary, producing a light, airy crumb and a satisfying golden crust. The bread is excellent served fresh, toasted directly on an oven rack, dipped in olive oil, or arranged on a charcuterie board — and pairs beautifully with red wine.
Each loaf freezes exceptionally well. Store at room temperature or refrigerate one loaf and freeze the other. To refresh the crust, preheat the oven to 425°F and place the bread directly on the middle rack for 4–5 minutes. To reheat from frozen, remove all wrapping and bake in a 425°F oven for 8–10 minutes.
