The production process emphasizes traditional methods: agave hearts are slow-cooked in stone and brick ovens before extraction via both tahona (volcanic stone wheel) and roller mill. Fermentation uses 100% agave fibers in stainless steel tanks with open-air exposure and natural spring water. The spirit is then double-distilled in copper pot stills, resulting in a crisp, unaged blanco expression.
