Dom du Cellier Burgundy Givry 1er Cru is a Pinot Noir from the Côte Chalonnaise appellation in Burgundy, France. The estate, known as Domaine du Cellier aux Moines, traces its origins to 1130 AD when Cistercian monks first cultivated the enclosed Premier Cru vineyard "Clos du Cellier aux Moines." The property was revived in 2004 by the Pascal family, who restored the estate and now farm it organically and biodynamically.
The grapes are hand-harvested and whole bunches are gravity-fed into oak vats, where they macerate at low temperatures before spontaneous fermentation. The wine is aged in oak casks (one-third new) for 16 to 18 months and bottled without filtration. The result is a vibrant, medium-bodied red wine with aromas of cassis, tart cherry, and sous-bois, leading to a palate of juicy cherries, currant, leather, and cinnamon with velvety tannins and crisp acidity.
This wine pairs well with salmon, roasted duck, mushroom risotto, and charcuterie boards. Serve slightly below room temperature at 60–65°F.
