Rivoire Jacquemin Comté Cuts are pre-cut portions of authentic French Comté cheese, sourced from the Jura Mountains region of France and matured by Rivoire Jacquemin, one of France's most respected affineurs with over 160 years of cheesemaking heritage.
Comté is an AOC-certified hard, cooked, and pressed cheese made from raw cow's milk, traditionally from Montbéliarde or Simmental herds that graze on the rich, diverse pastures of the Jura. Each wheel requires approximately 120 gallons of milk and is aged a minimum of 8 months. Rivoire Jacquemin is notably the only affineur to use sea salt from Guérande or Noirmoutier in the rind-washing process, contributing to the cheese's distinctive character. The natural brushed rind develops over time through regular turning, salting, and rubbing with a traditional morge solution.
The straw-colored paste is firm, slightly dry, and finely textured, with a complex aroma profile featuring nutty, toffee, and lactic notes. The taste is full and lingering, with flavors of roasted nuts and a pleasantly fizzy acidity. This versatile cheese performs beautifully on a cheese board as well as melted into soups, gratins, quiches, and sauces. It pairs well with Jura wines, Chardonnay varieties such as Chablis or Meursault, and Chenin Blanc.
