Shui Jing Fang Wellbay Phoenix is a premium Chinese baijiu (white spirit) produced by the Shui Jing Distillery (水井坊), widely recognized as the oldest continuously operating baijiu distillery in China. "Shui Jing Fang" translates to "the distillery by the well," a reference to the founding well dug by Master Wang in 1408, and "Wellbay" honors that same heritage.

Part of the limited-edition Wellbay Collection series, each expression in the line pays tribute to an auspicious beast from Chinese mythology. The Phoenix edition — known in Chinese as 水井坊井台珍藏版（凤） — represents the King of Birds, symbolizing nobility and elegance. Crafted in the strong-aroma (浓香) style, Wellbay Phoenix draws on the distillery's unique wealth of distillers' yeasts accumulated over more than 600 years of continuous production. On the nose it offers floral notes, plum, and dried prunes. The palate is refreshing with a subtle sweetness, earthy character, and a clean finish. Bottled at 53% ABV (106 proof) in a 1-liter format.
