Château Fleur Cardinale Grand Cru Classé is a prestigious red wine from the Saint-Émilion appellation in Bordeaux, France. This 2022 vintage is crafted from a blend of 70% Merlot, 25% Cabernet Franc, and 5% Cabernet Sauvignon, sourced from a 23-hectare estate with vines averaging 30 years of age. The vineyard sits on dark red clay over limestone soil in the St. Etienne-de-Lisse sector, positioned on a gentle slope reaching 75 meters elevation.
The wine is produced using certified organic farming methods and vinified in 25 small stainless steel vats, allowing for parcel-by-parcel fermentation. It is aged in 90% new French oak barrels for 12 to 15 months, with 3% aged in clay amphora. The result is a rich, mouth-drying tannic structure balanced by juicy characteristics of plum and black cherry fruit, along with chocolate and sweet spice notes. With age, it develops savory tobacco and cedar characteristics.
Food pairings include beef, lamb, pork, duck, game, roasted chicken, grilled dishes, rich fish courses like tuna, mushrooms, and pasta. Best served at 15.5 degrees Celsius (60 degrees Fahrenheit). The wine benefits from 6-9 years of aging and can be decanted for 1-2 hours to soften and open its perfume. Contains sulfites. Alcohol content: 12.5%.
