Ryme Cellars Chillable Red is a light, refreshing red wine crafted from an unusual blend of Sangiovese and Tocai Friulano grapes grown in adjoining blocks in Mendocino County. The grapes are picked together on the same day, fermented in whole clusters, and undergo carbonic maceration, resulting in a pale, carbonic wine with vibrant cherry notes, hints of lanolin, and a touch of something simultaneously sweet and vegetal that recalls a ripe summer tomato. The wine bursts with bitter, pleasantly sour flavors of cranberry and rhubarb, framed by excellent acidity and fine tannins.

This wine is designed to be served lightly chilled, making it perfect for warm weather and outdoor gatherings. Ryme Cellars, founded by husband and wife winemakers Ryan and Megan Glaab in Forestville, California, focuses on eclectic Italian grape varieties vinified in Old World style with a modern twist. The 2018 vintage showcases strong cherry characteristics with great acid structure and balanced tannins. The blend is approximately 85% Sangiovese and 15% Tocai Friulano, producing a wine that demands refrigeration and offers a unique alternative to traditional heavy reds.
