La Tur is a soft-ripened Italian cheese crafted by Caseificio dell'Alta Langa in the Piedmont region of Italy. It is a modern take on the traditional Robiola style, blending equal parts pasteurized cow's, sheep's, and goat's milk to create a complex flavor profile that is buttery and rich with a pleasant lactic tang. The core of the cheese has a unique texture reminiscent of loosely packed snow that becomes luxuriously creamy and begins to ooze from the center as it warms to room temperature.
La Tur is best enjoyed fresh at room temperature, served with artisan bread or crackers. Its delicate flavors are too subtle for cooking applications. A dusting of wild fennel pollen on top makes for an elegant presentation for entertaining. La Tur pairs beautifully with Champagne and other sparkling wines, whose effervescence cuts cleanly through the rich, creamy texture. Available in 8 oz rounds, sold by the pound.
