Chandon by the Bay Reserve Blanc de Blancs is a traditional-method sparkling wine from Domaine Chandon, celebrating the cool-climate terroir of Los Carneros in California's North San Pablo Bay. Made from 100% Chardonnay, it is crafted with the same meticulous approach used in classic Champagne production, with secondary fermentation occurring in the bottle and aging a full 52 months on the yeast lees — well beyond the minimum required — developing exceptional complexity and depth.

Grapes are harvested at night to preserve freshness and picked in early August to retain natural acidity. After gentle pressing to minimize skin contact, primary fermentation takes place in stainless steel tanks. Multiple vintage base wines are blended during assemblage for consistency before bottle fermentation begins.

The wine is zesty, elegant, and mineral on the palate, with notes of Fuji pear, apple, and citrus layered with brioche, almond, and honey. Key flavors include lemon, grapefruit, vanilla, stone fruit, and white flower. It pairs beautifully with seafood such as scallops, baked oysters, and fish tacos, as well as triple cream cheeses, queso fundido, roasted cauliflower, and shaved fennel salad.
