Caballito Cerrero Azul Blanco is an artisanal destilado de agave produced at Fábrica Santa Rita (NOM 1114) in Amatitán, Jalisco, Mexico — historically considered the birthplace of tequila. At 46% ABV (92 proof), this unaged blanco expression is crafted from 100% estate-grown Blue Weber agave (Agave tequilana) by 14th and 15th generation tequileros, making it one of the rare spirits with a direct lineage to producers of "vino del mezcal" dating back to the 1600s.
The distillery employs traditional production methods: agave piñas are cooked in historic brick ovens that have been in use since 1873, then milled using a stone tahona wheel. These time-honored techniques yield a deeply vegetal, herbal, and complex spirit that faithfully captures the authentic character of early Jalisco agave production. Caballito Cerrero is noted for being the first producer in the region to use the term "Tequila," and its distillery sits between the massive Herradura operation and the oldest known tequila distillery site, Cielo Abierto, now a UNESCO-recognized archaeological site.
