Tapatío Blanco Tequila is a premium unaged spirit produced by La Alteña Distillery, established in 1937 by Don Felipe Camarena in the highlands of Jalisco, Mexico. Crafted from 100% estate-grown Blue Weber Agave harvested at peak maturity, this tequila embodies traditional production methods that capture the pure essence of agave.
The agave piñas are slow-cooked in traditional brick ovens to enhance natural sweetness, then juices are extracted using a combination of traditional tahona (large stone wheel) and roller mill. Open-air fermentation occurs in wooden vats utilizing a proprietary yeast culture maintained for generations, followed by double distillation in copper pot stills. After distillation, the tequila is rested in stainless steel tanks for 6 months to allow oxidation and settling of flavors before bottling.
This classic highlands tequila features dominant cooked agave flavors complemented by mint and pepper, with a residual sweetness reminiscent of white chocolate and slight herbaceous undertones. The aroma presents fresh herbal notes with hints of mint, anise, white pepper, cinnamon, clove, and mild citrus, with apple and floral nuances emerging when allowed to breathe. Medium-bodied with a long, spicy, and sweet finish, it offers a complex and rounded tasting experience at 40% ABV (80 proof).
