High West Bottled in Bond Straight Bourbon is a 100% in-house produced bourbon from High West Distillery's facility in Wanship, Utah. Crafted in strict compliance with the Bottled-in-Bond Act of 1897, it is distilled by a single distiller in a single season, aged a minimum of four years in a federally bonded warehouse, and bottled at 100 proof (50% ABV). High West is the first distillery in Utah since Prohibition and the only ski-in gastro-distillery in the world, situated at the base of a ski run in Park City.

The bourbon is made from a mash bill of 64% non-GMO Colorado yellow corn and 36% Idaho rye grown with sustainable, carbon-conscious practices. Fermentation uses three distinct yeast strains, including the rare S. diastaticus, to enhance aromatic complexity. The spirit is aged at an altitude of approximately 4,000 feet, contributing to a high-rye expression with rich aromatic depth.

On the nose, expect honeycrisp apple, wildflower honey, graham cracker crust, golden raisins, and malted milk chocolate with toasted oak spice. The palate delivers layers of peach and cherry cobbler, gingersnaps, roasted marshmallows, puffed wheat cereal, cocoa nibs, molasses, dried thyme, and charred barrel staves. The finish is long with nuanced almond browning and brown butter warmth. Best enjoyed neat in a tulip or Glencairn glass, or in spirit-forward cocktails such as an Old Fashioned or Boulevardier.
