The Sauternes Cask Matured is a highly anticipated limited annual release showcasing the distillery's innovative approach to wine cask maturation. The 2024 edition features a carefully curated blend of 22% fresh and 78% refill Sauternes casks—barrels previously used to age the renowned sweet white wine from Bordeaux, France—primed through a prior short-term finishing process to maximize their sweet wine influence while preserving the distillery's signature peaty character.

Golden amber in color with a slight honeyed tint, this whisky opens on the nose with a rich bouquet of barbecued pineapple, candied ginger, and floral peat smoke, underpinned by a buttery sweetness. On the palate, Kilchoman's bold peat smoke interweaves beautifully with the lush, honeyed sweetness and ripe stone fruit notes imparted by the Sauternes casks, creating a harmonious and complex balance.
