Carr Valley Mobay is an award-winning American take on the French classic Morbier cheese, created by fourth-generation Master Cheesemaker Sid Cook. This distinctive semi-firm cheese combines two layers: a bright, tangy goat milk cheese on one side and a sweet, grassy sheep milk cheese on the other, separated by a thin layer of grape vine ash that runs horizontally through the cheese. Each half is created separately from pasteurized milk and cured for approximately four months before being pressed together.

The cheese offers a unique tasting experience with three distinct flavor profiles - the goat cheese layer, the sheep cheese layer, and both together, resulting in a rustic yet mild flavor with an almost grape-like finish. Mobay won the Silver Medal at the 2011 World Cheese Awards and 1st Place at the 2009 World Championship Cheese Contest.
