Cave Aged Marisa is an artisan sheep's milk cheese handcrafted by Carr Valley Cheese Company in LaValle, Wisconsin. This semi-hard cheese is made from pasteurized milk of Wisconsin sheep and aged for up to three months in open-air caves, where it develops its distinctive character. The natural aging process creates a dark brown rind speckled with white mold patches, while the interior remains firm with a pale straw color.

The sheep's milk imparts complex, sweet, creamy, and slightly tangy flavors that distinguish this cheese from typical cow's milk varieties.
