Isigny Crème Fraîche is an authentic, traditionally made cultured cream produced by the Isigny Sainte-Mère Cooperative, a Norman dairy cooperative based in Isigny-sur-Mer in the Calvados region of Normandy, France. It carries the prestigious AOP (Appellation d'Origine Protégée) designation — the first cream in the world to be awarded this protected designation of origin certification. The cream is crafted from milk sourced from small family farms guaranteed hormone-free, and is slowly matured in the traditional Normandy method, with the cream cultured for 18 hours to develop its signature flavor and texture.
This crème fraîche has a minimum fat content of 35%, giving it a firm, smooth, and perfectly uniform texture with a rich ivory color. The flavor is full-bodied and luxurious with delicate, subtle acidic notes. Additives, coloring agents, and antioxidants are strictly forbidden in its production. The product has won more than 20 medals at the prestigious French Concours Général Agricole agricultural competition over the past 15 years.
Isigny Crème Fraîche is extraordinarily versatile in the kitchen. It can be used warm or cold, folded into sauces for fish and meat dishes, stirred into soups, dolloped over desserts or fruit, used as a topping, whipped into a Chantilly-style cream, or blended into dressings. Unlike sour cream, it does not curdle when heated, making it ideal for hot preparations.
