Pont L'Évêque is a classic soft-ripened cow's milk cheese from Normandy, France, produced by Isigny Sainte-Mère and bearing Protected Designation of Origin (AOP/PDO) certification since 1996. This traditional square-shaped cheese features a distinctive whitish to reddish washed rind with a creamy, ivory to straw-yellow interior.
Tracing its origins to 12th-century Cistercian monks near Caen in Normandy, Pont L'Évêque is prized for its refined, mild flavors with subtle lactic, plant-like, and occasionally smoky or nutty notes. Each wheel is hand-turned during ripening and washed in salt water, with a ripening period of 8 days to 6 weeks. Milk is sourced from farms within a 50 km radius of the Isigny Sainte-Mère production facility in Isigny-sur-Mer. This 350g (12.35 oz) format is sold at Costco and is ideal served at room temperature alongside farmhouse bread, dried figs, or used melted in gratins.
