Domaine JB Jessiaume's Volnay is a classic red Burgundy from the Côte de Beaune, produced entirely from Pinot Noir grown in the Climat "Les Brouillards." Though classified as a Village appellation wine, the parcel uniquely straddles the Village and Premier Cru boundary — the first 50 meters of vine rows fall within the Village appellation, while the remaining rows qualify as Premier Cru. The vineyard covers just 0.08 hectares of south-east-facing white Argovian limestone soils, planted with 50-year-old vines that contribute depth and concentration to the wine.
In the winery, grapes are carefully sorted before being placed whole-cluster into tank (approximately 30% whole clusters in recent vintages). A five-day cold pre-fermentation maceration precedes spontaneous fermentation, with the grapes remaining in tank for roughly three weeks during alcoholic fermentation. The wine is then transferred by gravity into French oak barrels — 25% new oak — where it matures for 15 months. Neither fining nor filtration is performed, preserving the full expression of terroir and fruit.
The wine opens with a complex aromatic profile of black fruits and floral notes. On the palate, it strikes an elegant balance of power and refinement, revealing a concentrated structure with a long, persistent finish of black fruit. It pairs beautifully with roasted duck, lamb, guinea fowl, and soft-ripened Burgundian cheeses.
