Devaux Cuvée D is a prestige Brut Champagne crafted by Champagne Devaux (Veuve A. Devaux) from the Côte des Bar in the Aube region of Champagne, France — an area known for its Kimmeridgian limestone and clay soils shared with Chablis. This non-vintage cuvée is a blend of 55% Pinot Noir and 45% Chardonnay, drawn exclusively from "D Selection" vineyard plots held to standards that exceed Champagne's already high bar. Only the first pressing of the grapes is used, resulting in finer acidity and deeper complexity.
Aged a minimum of five years before release, Cuvée D pours a golden yellow with a delicate, persistent mousse. The nose opens with white blossom and soft spices, giving way to toasted brioche and vanilla, with freshness expressed through mandarin and orange zest. On the palate it is deliciously creamy and expansive, showing almond, baked biscuit, citrus peel, French apple tart, brown spice, and a dark cherry note from the Pinot Noir. The finish is mouthwatering, fresh, and uplifting. Decanter has awarded this bottling 97 points (Platinum) on two separate occasions, placing it in the top 1% of all Champagnes globally. It has also earned 93 points from James Suckling and 90 points from Wine Enthusiast.
Cuvée D is a fixture on Michelin three-star wine lists including Gordon Ramsay's namesake restaurant in London and Anne-Sophie Pic's Maison Pic in Valence. It pairs beautifully with duck foie gras, sea scallops with truffles, lobster, capon with morels, sea bass, and soft cheeses. Serve at 45°F. ABV: 12%.
