J. Vignier "Aux Origines" is a Non-Vintage Blanc de Blancs Champagne from France, produced by Nathalie Vignier and her family whose winemaking history in Champagne traces back to 1530. The name "Aux Origines" — meaning "where it all began" — pays tribute to the very first vineyards planted by Nathalie's grandparents, Marie-Louise and Paul, in Barbonne-Fayel, Côteaux Sézannais, in the 1960s. Nathalie is the tenth generation to pursue viticulture and winemaking in Champagne, and the sixth generation based in the grand cru village of Cramant in the Côte des Blancs.

This cuvée is crafted from 100% Chardonnay, hand-picked at optimal maturity and whole-cluster pressed using only the first press juice. Fermentation takes place in stainless steel tanks with full malolactic conversion, followed by cold settling and slow fermentation at low temperatures. The wine is bottled the April following harvest and aged a minimum of 36 months before disgorgement. Dosage is Extra Brut at 5 g/L, resulting in a precise, mineral-driven style. Sustainable farming practices are observed across the 16.5 hectares of Chardonnay vineyards in the Côte des Blancs and Côte de Sézanne.

In the glass, the wine shows a lovely pale straw color with aromas of lemon, crème brûlée, and hints of grilled nuts. It is richly flavored and finely balanced, making it an excellent pairing with shellfish, crab, and lobster. Rated 91 points.
