Thomas S. Moore Cognac Cask Finish is a Kentucky straight bourbon whiskey produced by Barton 1792 Distillery. This exceptional bourbon begins with a high-rye recipe bourbon aged for 5 to 6 years in new charred oak barrels, then finished for an additional 2 to 4 years in used cognac casks that previously held cognac for six or more years.

The extended cask finishing process creates a complex flavor profile featuring brown sugar, berries, light orange, plum, and dried raisins on the nose, resting on a bed of aged oak. The palate reveals aged dried oak, dry leather, tobacco leaf, green peppercorn, orange rind, and light vanilla bean with noticeably dry earthy flavors and a light mouthfeel. Notes of complex and aged stone fruit, caramel, and rich oak provide a luscious character, with orange, apricot, and vanilla followed by complex earthy undertones.
