Mount Fishtail was the first Marlborough Sauvignon Blanc made with French clones rather than the widely used UCD1 clone, resulting in a more distinctive flavor profile. The Zero variant is produced by shipping the finished wine in bulk to Belgium for alcohol removal using advanced evaporative distillation technology, which preserves the wine's natural and characteristic flavors far better than spinning cone methods. The wine is then finished and bottled in Belgium before being shipped to market. The vineyards are located in the Upper Wairau Valley, where sunny days and crisp nights create ideal growing conditions.
