The piñas are split in half and slowly cooked in small stone ovens before being crushed using a traditional stone tahona mill, then further extracted with a mechanical roller mill. Fermentation takes place in open-air stainless steel tanks using natural airborne yeasts, both with and without the cooked agave fibers, allowing the terroir to express itself fully. After double distillation in small copper pot stills, the spirit is transferred into American oak barrels for aging.
