David Finlayson Chardonnay is a South African white wine from Stellenbosch, crafted by one of the region's most celebrated Chardonnay specialists. This is the seventeenth vintage of the wine, made from five different vineyards across Stellenbosch, each harvested at optimal ripeness and barrel fermented separately using a combination of pure yeast inoculation and natural yeasts. Roughly 30% of ferments undergo malolactic fermentation, and the wine is stirred twice during barrel aging to develop a creamy, harmonious texture. Fined with bentonite and Vegecol, making it vegan-friendly, and bottled under screwcap to preserve freshness.

The wine shows an elegant minerality with notes of lime-citrus, sourdough, and cinnamon, with a floral character of wild white flowers such as frangipani and almond blossom on the nose. The palate is well balanced with fine delineation, a pleasing mineral quality, and a composed tropical-tinged finish. The style is intentionally inspired by Burgundian Chardonnay — particularly Meursault — leaning toward elegance and food-friendliness over overt richness.
