Union Sacré Carbonic Sangiovese is a 100% Sangiovese red wine from Paso Robles, California, crafted using carbonic maceration — a whole-cluster fermentation method in a closed, oxygen-free tank for approximately 36 days. This natural winemaking technique produces a lighter, fruit-forward style with vibrant aromatics and soft structure. The wine is organically farmed and aged for three months in neutral French oak before bottling.

On the nose and palate, expect expressive notes of raspberry, cherry, pomegranate, violet, and rose petal, layered with hints of peppercorn, fennel, licorice, and spice.
