Bone-in lamb shoulder chops sourced from Australia and sold by the pound. These cuts come from the blade portion of the shoulder, similar in style to a bone-in pork chop, and are prized for their rich marbling and robust flavor. Australian lamb is naturally raised on open pastureland and is free of artificial additives and hormone growth promotants, resulting in a distinctive, clean flavor profile with more marbling than New Zealand lamb.
The shoulder is a well-worked muscle, giving these chops a deeply savory taste and good fat-to-meat ratio. They are versatile in the kitchen: for quick preparation, grill or pan-sear 4 to 5 minutes per side to a medium-rare internal temperature of 145°F.
