Daniel Weller Spelt Wheat is an experimental Kentucky Straight Bourbon Whiskey produced by Buffalo Trace Distillery. It is the second release in the Daniel Weller series, following the 2023 Emmer Wheat bottling, and represents the distillery's exploration of rare and ancient grain varieties in bourbon production.

This whiskey is distilled from a mash bill incorporating spelt wheat — an ancient grain more commonly associated with European baking and craft brewing than whiskey making. Aged for 10 years in standard barrels without specialized barrel treatments, allowing the grain itself to define the character of the spirit. It is bottled at 94 proof (47% ABV).

The nose is nutty and biscuit-forward, with aromas of cookies, clove, cinnamon, nutmeg, butterscotch, fresh fruit, and leather. On the palate, flavors of dried fruit and tea emerge with a subtle floral quality. The finish is long and sweet, featuring soft fruit and additional nuttiness.

Each bottle is presented in a distinctive glass design unique to the Weller portfolio, featuring a compass stopper inscribed with the coordinates of Daniel Weller's farm near Botland, Kentucky. The series honors Daniel Weller, an 18th-century Kentucky settler and grandfather of famed whiskey entrepreneur William Larue Weller. Costco carries this as a 6-pack of 750ML bottles.
