Origami Sake Angelfish is a premium Junmai Daiginjo brewed in Hot Springs, Arkansas, by Origami Sake, the first sake brewery established in Arkansas. The brewery is nestled in the Ouachita Mountains, where it sources local mineral water and uses 100% Arkansas-grown rice for every bottle.

Angelfish is brewed with Isbell Farms Yamada Nishiki rice polished to 40% of its original size, the standard required for authentic Junmai Daiginjo classification. This single-origin rice approach gives the sake a distinctly refined character. Tasting notes include honeydew, pear, figs, and honeysuckle, with a surprisingly light body, precise balance, and a clean finish. It pairs well with braised eel, steak tartare, and caprese salad.

Angelfish has earned multiple international awards, including a 2025 Gold Medal at the Tokyo International Sake Competition, a 2025 Silver Medal at the Craft Spirits Berlin Awards, and a 2023 Platinum Medal. Head brewer (Toji) Justin Potts holds certification as a Sakasho (Master of Sake) from the Japan Sake Service Institute.
