Union Sacré "40 Days" is a skin-contact orange wine from California's Central Coast, crafted by winemakers Xavier and Philip of Union Sacré Wines, a project rooted in Alsatian tradition and California terroir. The blend is 40% Gewürztraminer, 30% Pinot Blanc, 20% Pinot Gris, and 10% Sylvaner, co-fermented on the skins for a full 40 days in a 900-gallon wood tank. The wine is dry, unfiltered, and unfined, fermented with native yeasts.

The extended skin contact yields a deeply textured, aromatic wine with notes of orange blossom, honeysuckle, potpourri, and chamomile, with dried citrus peel and a gentle tannic grip on the palate. Best served slightly chilled at 50–55°F to allow the aromatics to fully open. Pairs well with spicy North African cuisine, funky washed-rind cheeses, and roasted duck. 12.3% ABV.
