JCB No. 81 Chardonnay is an unfiltered, single-vineyard-inspired white wine from the Sonoma Coast appellation of California, crafted by Jean-Charles Boisset. The number 81 pays homage to 1981, the year Boisset first traveled from Burgundy to California and was inspired to create an elegant Chardonnay evocative of white Burgundies yet undeniably Californian in character.

On the nose, notes of lemon citrus and honeysuckle give way to Anjou pears and honeycomb on the palate. The wine displays a creamy, crème-brûlée-like texture with rich plushness balanced by bright minerality that dances on the mid-palate. The finish is long, dry, and sophisticated, with lingering hints of vanilla, citrus, and warm caramel throughout.
