Kirkland Signature USDA Choice Beef Back Ribs are premium quality ribs cut from the ribeye subprimal, the same section used for prime rib and bone-in ribeye steaks. These ribs feature the rich, beefy flavor characteristic of ribeye cuts with USDA Choice grading, indicating high marbling and tenderness. Sold by the pound, packages typically average 4-5 pounds per rack.
Beef back ribs are primarily bone with less meat coverage than short ribs, as butchers remove most of the meat for high-value steaks. However, the meat present delivers exceptional steak-like flavor. These ribs are ideal for slow cooking methods including smoking, braising, or oven-baking at low temperatures (250°F for 4-5 hours) to achieve tender, fall-off-the-bone results. They can be seasoned with dry rubs featuring smoked paprika, garlic powder, and black pepper, then finished with BBQ sauce or Asian-inspired glazes.
For optimal results, cook bone-side down and consider removing the membrane from the back of the ribs before seasoning. These ribs work well with both dry-heat smoking methods and braising techniques that maximize tenderness and develop deep, savory flavors.
