Each 7.5 oz (213g) wheel features a thin bloomy rind with a buttery, silky interior and a subtle mushroomy flavor. The milk comes from cows raised on year-round barn-free grazing, and the cheese is made without rBST.

Every wheel is individually handcrafted and ripened for two weeks before being hand wrapped. Ingredients include pasteurized grass-based cow's milk, cultures, Atlantic sea salt, and enzymes. Green Hill is an eight-time winner at the American Cheese Society Annual Conference.
