Sea Smoke Southing Pinot Noir is a premium wine from the renowned Sea Smoke Estate Vineyard in the Sta. Rita Hills AVA of Santa Barbara County, California. The Southing bottling is named for the south-facing hillside bluffs of the estate vineyard, which has been organically and biodynamically farmed since 2013. The wine is crafted from 100% Pinot Noir grapes that are gently destemmed after hand harvesting, followed by a cold soak of 1-4 days before fermentation with cultured yeasts. Manual punchdowns occur throughout a total maceration time of 14-18 days, with both free-run and press wines aged 16 months in French oak barrels, typically 28-55% new depending on vintage. The wine is bottled unfined and unfiltered to preserve its character.

This wine displays a moderately dark garnet color with complex aromas of black cherry, black raspberry, rose petal, white pepper, earthy flora, and subtle oak. On the palate, it offers discreetly concentrated flavors of black cherry, boysenberry, and blackberry with touches of spice, dark chocolate, and floral accents. The Southing is known for being the more approachable and elegant of Sea Smoke's Pinot Noir bottlings, featuring dark red fruits with excellent balance between fruit, tannins, and the bright acidity characteristic of the Sta. Rita Hills region. The finish is notably long with persistent fruit character. Typical alcohol content ranges from 14.5-14.8% depending on vintage. Recent vintages have scored 92-97 points from critics, with the wine being described as having excellent aging potential while also being ready to enjoy upon release with proper decanting.
