American Wagyu beef eye round roast, sold by the pound at Costco's fresh meat counter. This cut comes from the rear leg of American Wagyu cattle, a cross between Japanese Wagyu and Black Angus breeds, offering enhanced marbling and richer flavor compared to standard USDA Choice eye of round. The roast is vacuum packed with an average weight of approximately 5 pounds.
The eye of round is a long, lean muscle from the rump of the cow, known for its deep beefy flavor. Despite being a leaner cut, the American Wagyu genetics provide more intramuscular fat and tenderness than conventional eye of round. This versatile roast is ideal for slow roasting at low temperatures (225 degrees Fahrenheit until reaching 135 degrees internal), sous vide cooking for 24 hours, braising in a Dutch oven or Instant Pot, or slicing thin for homemade beef jerky. For best results, slice very thinly across the grain after cooking.
