American Wagyu Beef Loin Flap Meat Steak is a premium cut sourced from the bottom sirloin section of the steer, prized for its exceptional marbling and rich, beefy flavor. American Wagyu cattle are descended from Japanese Wagyu breeds, crossbred with domestic cattle to produce beef with superior fat distribution and tenderness at a more accessible price point than full-blood Japanese Wagyu.
The flap steak, also known as Bavette steak, features long strands of loosely connected muscle fibers that become incredibly tender when sliced against the grain. Its open grain structure makes it one of the few steaks that readily absorbs marinades, allowing bold flavors to penetrate deeply throughout the cut. This combination of natural flavor and tenderness makes it exceptionally versatile in the kitchen.
This cut is ideal for fajitas, stir fries, and grilled preparations. For fajitas, marinate and slice thinly against the grain. For stir fry, cut into thin strips and sear in a hot wok with oil, then combine with vegetables and sauces. Costco uses blade tenderization on this cut to enhance tenderness, which means the steak must be cooked to a minimum internal temperature of 145°F (medium). Sold per pound.
