Ivy's Reserve Vintage Cheddar is a premium artisan cheddar made on Wyke Farms' family farm in Somerset, England — the historic home of cheddar cheese. Each random-weight block weighs approximately 1.1 lb (500g) and is sold by the pound at Costco's deli counter.
Handcrafted following a recipe perfected by grandmother Ivy nearly a century ago, this cheddar is aged for up to 18 months beneath a wooden rind, developing a rich, full-bodied flavor with a smooth, crumbly texture, a hint of sharpness, and a nutty, rounded finish. It is the world's first carbon-neutral branded cheddar, made entirely with 100% green energy. The cheese is suitable for vegetarians, gluten free, and packaged in a protective atmosphere. White crystals or a white coating may appear on the cheese — these are calcium lactate crystals that naturally form during maturation and are a mark of quality aging.
Ivy's Reserve pairs beautifully on a cheeseboard alongside fresh fruit, chutneys, pickles, and sourdough crackers. It is also excellent melted into macaroni and cheese, grilled cheeseburgers, or crostini. For drinks, the cheese is complemented by a full-bodied red wine or a glass of traditional Somerset cider.
