Wild Chilean Sea Bass, also known as Patagonian Toothfish, is a premium white fish prized for its rich, buttery flavor and tender, flaky texture. This wild-caught fish is sold previously frozen and by the pound at the fresh seafood counter. The fish has a distinctly luxurious quality with a scallop-like texture and high natural oil content that keeps it moist and makes it nearly impossible to overcook.
Chilean Sea Bass is incredibly versatile and forgiving in the kitchen. It sears beautifully like a steak, developing a golden crust while remaining succulent inside. The relatively fatty composition allows it to hold up well to various cooking methods including pan-searing, grilling, baking, and broiling. Its mild yet rich flavor pairs excellently with simple preparations like garlic butter, lemon and herbs, or can stand up to bolder seasonings.
This fish is often described as the "Filet Mignon of the Sea" and is comparable to restaurant-quality preparations where fresh Chilean Sea Bass commands premium prices. The previously frozen designation indicates it was frozen at sea immediately after catch to preserve peak freshness and quality. Many customers report being unable to distinguish between this product and never-frozen, premium restaurant fish.
