Daikon radish is a large, mild white root vegetable widely used in Japanese, Korean, and Chinese cuisines. The roots have a crisp texture and a flavor similar to a very mild red radish, making them versatile for both raw and cooked preparations.
Daikon can be eaten raw, shredded into salads or as a garnish, grated alongside sushi and grilled meats, or sliced thin for pickling. It is also excellent in cooked dishes such as soups, stews, and braises, where it absorbs flavors while softening. Each 2.5 lb package provides a generous quantity suitable for multiple meals.
When selecting daikon, look for firm, bright white roots without gray or blue discoloration. Store loosely wrapped in the refrigerator, where it will keep for at least a couple of weeks.
