Costco's Wild Chilean Sea Bass is a premium wild-caught seafood offering from the Kirkland Signature line, sold by the pound at the seafood counter. Also known as Patagonian Toothfish, this fish is harvested from MSC-certified sustainable fisheries in the pristine sub-Antarctic waters of Macquarie Island, the Falkland Islands, South Georgia, and the Heard and McDonald Islands. The product is previously frozen to lock in freshness and quality at the source.
Chilean Sea Bass is widely regarded as one of the finest eating fish available, prized for its firm white flesh, rich buttery flavor, and melt-in-your-mouth texture. Food enthusiasts frequently compare it to black cod and describe the experience as "scallop-esque." Comparable cuts at upscale restaurants routinely sell for $45 or more for an eight-ounce portion, making Costco's per-pound pricing an exceptional value.
For best results, thaw the fillets overnight in the refrigerator covered with plastic wrap to retain moisture and texture. Chilean Sea Bass responds beautifully to pan-searing for a golden, caramelized crust, poaching for a silky and tender consistency, or grilling with garlic butter. Once thawed, use within two days and do not refreeze.
