Wild Chilean Sea Bass sold by the pound at Costco's fresh fish counter. Despite being labeled "fresh," this fish has been previously frozen and thawed for display — a common and safe practice for high-quality seafood. It carries MSC (Marine Stewardship Council) certification, indicating it was sustainably sourced.
Chilean Sea Bass is the market name for Patagonian Toothfish, a deep-water species prized for its exceptionally rich, buttery flavor and moist, flaky texture. The fish is wild-caught, with recent sourcing from Australian waters, and processed in the USA. It is among the most premium seafood offerings available at Costco.
Chilean Sea Bass is best prepared simply: pan-sear over medium heat with butter and fresh herbs for 10–15 minutes until the flesh flakes easily, then finish with a squeeze of lemon juice. Its high fat content makes it forgiving to cook and ideal for a wide range of preparations including baking, broiling, and steaming.
