Cobia (Rachycentron canadum) is a prized ocean fish celebrated for its sweet, rich flavor and lean, moist flesh. Sold fresh as skin-on fillets and priced per pound, this farm-raised cobia delivers the clean, buttery taste and firm, broad-flaked texture that has made the species a favorite among chefs worldwide. The raw meat is light tan and turns snowy white when cooked.
Farm-raised cobia is known for its consistent quality and higher fat content compared to wild-caught fish, resulting in a succulent, forgiving fillet that stays moist under a wide variety of cooking methods. It can be grilled, baked, broiled, or sautéed with excellent results, and its mild flavor and attractive pale color also make it suitable for raw preparations such as sushi, sashimi, and ceviche. Because of its firm texture it is very forgiving for home cooks and nearly impossible to overcook.
Cobia is an excellent source of lean protein and is naturally rich in Omega-3 fatty acids (EPA and DHA), riboflavin, niacin, vitamin B6, magnesium, potassium, and selenium. A single 4 oz portion provides approximately 1,850 mg of EPA and DHA Omega-3, surpassing farmed Atlantic salmon and wild coho salmon in Omega-3 content. The American Heart Association recommends eating fish at least twice a week, and cobia is considered one of the safest seafood choices for all populations.
