Wild Chilean Sea Bass, also known as Patagonian Toothfish, is one of the most prized seafood offerings available at Costco's fresh meat counter. Caught from cold, deep waters including certified sustainable fisheries off Australia, these fillets are first frozen to lock in peak freshness and then thawed for convenient purchase by the pound. The fish carries MSC (Marine Stewardship Council) certification, confirming it meets rigorous standards for sustainable wild fisheries management.
Chilean Sea Bass is celebrated for its sweet, rich, buttery flavor and uniquely tender texture. The white flesh is firm yet melts in the mouth, producing large succulent flakes when cooked — a quality that makes it ideal for special occasion meals and restaurant-quality dining at home. Despite its name, the fish is technically a type of cod rather than true sea bass, a distinction that does nothing to diminish its premium reputation.
To prepare, thaw overnight in the refrigerator, keeping the fish covered to retain moisture. Do not refreeze once thawed; use within two days. Pan-frying in butter over medium heat for 10–15 minutes until the internal temperature reaches 145°F produces a golden crust while keeping the inside tender and flaky. It also excels when poached, baked, or grilled with garlic butter and a squeeze of fresh lemon.
