Fresh Wild Black Cod Fillet is premium sablefish (Anoplopoma fimbria) sourced from the cold, deep waters of the Pacific Coast and Alaska. Sold per pound at random weight, each fillet is cut and offered fresh, providing an exceptionally rich, buttery eating experience that sets this fish apart from ordinary white fish.
Black cod, also called sablefish or butterfish, is prized for its velvety, melt-in-your-mouth texture and large, pearlescent white flakes. Its naturally high oil content means it is nearly impossible to overcook, making it an ideal choice for home cooks and professionals alike. The flavor is mild yet distinctly rich, with a sweet, silky quality that pairs beautifully with bold marinades such as the classic miso-sake preparation made famous by Nobu restaurant.
Wild-caught black cod carries one of the highest omega-3 fatty acid concentrations of any seafood, with approximately 1,792mg of EPA and DHA per 100g—nearly double that of wild king salmon. The fishery is Marine Stewardship Council (MSC) certified sustainable and rated "Best Choice" by the Monterey Bay Aquarium Seafood Watch program, reflecting responsible harvesting practices across its range. This fish is also naturally low in mercury.
It is versatile across cooking methods—excellent baked, broiled, grilled, smoked, steamed, or sautéed. For best results with miso marination, marinate for 48–72 hours before cooking under a broiler.
