Jasper Hill Farm Whitney is an award-winning alpine-style cheese made from raw cow's milk sourced from the farm's own Andersonville herd in Greensboro, Vermont. Named after Tim Whitney—Jasper Hill's longest-standing team member—this cheese is crafted with traditional semi-firm mountain methods using reclaimed copper vats from the Jura Mountains. Curds are formed, cooked, and transferred to draining molds under vacuum bells, resulting in a beautifully smooth, tight-knit texture that sets Whitney apart.
The cheese is aged 3 to 6 months and features a velvety-smooth, pliant texture with signature notes of toasted nuts, cured ham, and sweet cream. Jasper Hill's innovative natural culture program—using incubated starters and rennet fermented in clarified whey—along with the raw milk microflora, produces a complex, terroir-driven flavor. Whitney pairs beautifully on a cheese board with cured meats, dried figs, and pickled shallots, served alongside a natural white wine. Modeled after classic melting cheeses like raclette, it is ideal for use with a raclette machine melted over roasted potatoes, garnished with cornichons and charcuterie.
