Wild U-8 Brown Shrimp are extra-colossal, wild-caught shrimp sold by the pound at Costco's fresh seafood counter. The "U-8" designation means there are under 8 shrimp per pound, placing these among the largest shrimp available for purchase — often called extra-colossal or super-colossal shrimp.
"Brown" refers to the brown shrimp species (Farfantepenaeus aztecus), a prized wild-caught variety commonly harvested from the Gulf of Mexico and South Atlantic waters. Brown shrimp are known for their sweet, mild, and slightly briny flavor with a firm, succulent texture that holds up well to high-heat cooking methods.
These shrimp have been previously frozen at sea to lock in peak freshness and are thawed in-store for display at the seafood counter. They are ideal for grilling, broiling, sautéing, or butterflying and baking, where their impressive size and flavor can truly shine. Shell-on preparation is recommended for grilling to retain moisture.
