Wild-caught Hokkaido sea scallops (Patinopecten yessoensis) harvested from the pristine cold waters off Hokkaido, Japan. The U-16 designation indicates jumbo-grade scallops, with fewer than 16 scallops per pound, meaning each individual scallop is impressively large and substantial.
These are dry-packed scallops with no added phosphates, brine, or preservatives โ the ingredients are simply scallops. Unlike wet-packed scallops that are soaked in a phosphate solution and release excess water during cooking, these dry-packed scallops sear beautifully and develop a golden-brown crust. The lack of additives also ensures a clean, naturally sweet, and buttery flavor profile without any soapy or metallic off-notes.
Previously frozen at peak freshness to lock in quality, these scallops are sold per pound at the seafood counter. To prepare, thaw slowly in the refrigerator overnight or under cold running water, then pat completely dry before cooking. They are excellent seared in a hot skillet with butter and garlic, grilled, broiled, or incorporated into pasta and risotto dishes.
