These wild-caught U-16 sea scallops are sourced from the pristine waters of Hokkaido, Japan, one of the world's most prized scallop fishing regions. The U-16 designation means fewer than 16 scallops per pound, indicating an exceptionally large size that delivers a meaty, satisfying bite โ yielding approximately 28 to 32 scallops per 2-pound bag.
Hokkaido scallops (Patinopecten yessoensis) are renowned for their naturally sweet, clean ocean flavor and firm yet tender texture. Unlike wet-packed scallops treated with phosphate brine, wild Hokkaido scallops are individually frozen without additives, which means they sear beautifully without releasing excess water and shrinking in the pan. They are versatile and well-suited for pan-searing, grilling, baking, or serving raw as sashimi.
The scallops are previously frozen to lock in peak freshness at the source and should be thawed in the refrigerator before use. Each bag contains approximately 2 pounds of product ready for home preparation.
