These are large, wild-caught sea scallops graded U-12, meaning fewer than 12 scallops per pound — an indication of exceptional size. Each scallop carries a USDC Grade A designation, confirming excellent odor, color, and appearance with no obvious blemishes or defects, as defined by the National Oceanic and Atmospheric Administration (NOAA).
These are dry scallops, meaning they contain no added sodium tripolyphosphate (STPP) or other chemical preservatives. Dry scallops sear beautifully in a hot pan, developing a golden-brown crust without releasing excess moisture during cooking. Wet scallops treated with STPP tend to steam rather than sear and produce a rubbery texture — a problem these scallops avoid entirely. Wild-caught scallops are considered a sustainable seafood choice, as sea scallops are not overfished and are harvested under regulations that protect habitat and reduce bycatch.
Sold per pound from the Costco seafood case, these scallops are ideal for pan-searing, broiling, grilling, or use in classic preparations such as Coquilles St. Jacques. Thaw overnight in the refrigerator before cooking for best results.
