Fresh Wild Opah Fillet, also known as moonfish (Lampris regius), is a premium wild-caught seafood offering sold by the pound at Costco's fresh meat and seafood counter. Opah is one of the most visually striking commercial fish species, with a silvery-grey upper body that shades to rose red dotted with white spots toward the belly, crimson fins, and large eyes encircled with gold.
The flesh is uniquely divided into three sections, each a different color: vibrant orange near the backbone, pale pink toward the belly, and dark red in the cheeks — all of which turn white when cooked. The flavor is rich, creamy, and distinctly delicious, often described as a cross between tuna and swordfish, with a firm, fatty texture and large, satisfying flakes. The top loin is particularly prized and is frequently served raw as sashimi.
Opah is wild-caught primarily by longlining in Hawaiian waters and incidentally off the California coast. It is sustainably managed and responsibly harvested under U.S. regulations overseen by NOAA Fisheries. Available year-round, with peak landings from April through August. Almost all opah sold in the U.S. market originates from Hawaii.
Opah is a rich source of omega-3 fatty acids, protein, niacin, vitamins B6 and B12, phosphorus, and selenium, while being naturally low in sodium. It is highly versatile in the kitchen — excellent for grilling, broiling, baking, sautéing, steaming, or serving raw as sashimi. Its rich fish oils and unique flavor profile make it a favorite in upscale restaurants and among adventurous home cooks alike.
